Boyacá is located in the Eastern Cordillera of the Andes, with many coffee-growing areas situated between 1,400 and 2,100 meters above sea level. This altitude favors slow ripening of the bean, allowing for a greater concentration of sugars and aromatic compounds. It produces beans with bright acidity, medium body, and a more complex flavor profile. Cool climate with high solar radiation: Unlike other coffee-growing regions in Colombia that have warmer climates, Boyacá has a cool-temperate climate with good solar radiation during the day. This reduces the incidence of pests such as the coffee berry borer. It contributes to greater bean density, which is an indicator of quality.

Small-scale cultivation and traditional methods: Coffee in Boyacá is primarily grown by farming families on small farms. Many producers still use artisanal methods for cultivation, manual harvesting, and processing (wet milling). This results in a more carefully crafted, selective, and differentiated coffee. Sustainability and agroecological farming: Since it is not a high-volume production area, many coffee growers have adopted the following practices: Organic or agroecologicalwithout intensive use of chemicals. Natural shade systems and soil conservation.
